Off the face of the earth

It’s feels like always between May-July of every year I seem to drop off the face of the Earth when it comes to my blog. I first want to thank everyone who is still coming and checking in, and say that I am sorry. 

There is no major reason this year of why I have dropped off, I have to doing TONS and have a huge amount of race recaps, restaurant reviews, and more to up date. It’s just finding the time to sit down and do it, when I would rather be outside or spending time with my love. I am sorry that I have left you all just hanging and will be back with a purpose starting today! 

A fast recap of the past couple of months: 

-Studying to be a personal trainer through ACE Fitness, hoping to also add group class teacher to that too by the end of October. 

- Fulling injuried myself in May 2 weeks before the Delaware half marathon. Jrod still ran it, but I just took a lot of pictures. New goal is to figure out another race for Delaware next year. 

-Randomly signed up for the Virginia Beach Rock n Roll Half Marathon later this month. My friend Suzie is coming up from Florida and we are going to run it together. Hoping my body hold up, but rehab is coming along great. 

-Reading self help business books like they are going out of style. Can’t wait to share my reviews, and tips about what I personally found to be truly helpful. 

-Tried out a new company (Modere), it’s not anything like I thought it was going to be and I am working on sending everything back later this week. Getting involved with this company really made me find my focus about how I want my journey to look like, and it’s more towards Health & Wellness products that are truly holistic. 

-Stepping up my training all around and got Beachbody’s newest workout PiYo and I LOVE IT! The first month I lost 11 inches! 

-Working on lots of projects around the house, can’t wait to share them with you all! 

-Really focusing on doTERRA and healing my body, along with helping my friends heal theirs.

Tiffany was wonderful to give me a recipe that they could be used in, just to give you an idea.

French Vanilla Crepes With White Chocolate Strawberry Mousse

1 1⁄2 c thrive instant milk, prepared
3 T thrive whole egg powder, reconstituted
2 T vanilla extract
1 1⁄2 c thrive white flour
5 T thrive white sugar, divided
1⁄2 t thrive iodized salt
5 T melted butter
1 1⁄2 c thrive freeze dried strawberries, plus rehydrating liquid (water, juice, etc.)
1 3⁄4 c heavy whipping cream
6 oz white chocolate, chopped

*In a large bowl, mix together the milk, eggs, and vanilla. Stir in the flour, 2 T sugar, salt, and melted butter until well-blended.
*Heat a sauté or crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray.
*Pour about 1/4 c of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over, and cook until lightly-browned on the other side and edges are golden. Repeat with remaining batter.
*To make mousse, reconstitute freeze dried strawberries for 5-7 minutes in enough hot liquid to cover. Strain mixture into a small bowl. Sweeten by adding remaining sugar, then stir until sugar dissolves. Process in a blender or food processor until sauce runs smooth. Makes 1 c of sauce.
*In a heavy saucepan on low heat, warm 1/4 c heavy cream with white chocolate, stirring constantly until chocolate melts. Let mixture cool until it is lukewarm. Stir in 2 T of strawberry sauce, then transfer to a large bowl.
*In a medium bowl, whip remaining cream into soft peaks. Fold into melted chocolate mixture, one-third at a time, until no streaks remain.
*Layer mousse into crepes, and serve with the sauce.

She also uses them in her Champagne! How smart!

Disneyland Adventures

I first off want to state that in the many years I worked at Disney, one of my favorite tasks to do was rope drop. My dear friend Suzie is a we mystery be there at rope drop kind of person, and personally I agree.

This year marked the 3rd time I had ever been to Disneyland and the second time staying on property. We stayed at the Grand Califoria and I will always stay there from now on! I figured this can happen since I only go about once every 7 years. It is completely worth paying the extra to get in for extra magic hour.

Our first day was Disneyland, we were able to ride 70% of our must ride list by 10am! Even though it was a sold out weekend, for the first two hours it was as if we had the park to ourselves. Early Magic hour is also key because a Disneyland is very old school and doesn’t have a lot of places with fast passes. I personally feel this was a great bonus, and that Disneyworld is over flooded with them so it’s not as enjoyable as it once was.


The Matterhorn, we waited about 5 mins!



For Space Mountain it took us longer to walk to the start of the ride than anything else, it was a ghost town!

Disneyland resort review: Grand California

The time as come, it’s RunDisney Princess Half Marathon weekend and I thought I would keep sharing my amazing time in California for the Tinkerbell Half Marathon to get me pumped up for my run on Sunday!

First off let me tell you that I would have never in a million years even thought to book at Disneyland’s Grand California, and now I will ALWAYS stay there for races. Why, simple, the starting line is right outside of the hotel. We woke up at 3:45am got dressed, ate a light snack, and headed downstairs at 4:30am. When it’s over you simple walk across a couple of parking lots and you are back at the hotel. I was able to walk straight into California Adventure and load up on Fastpasses before heading back to the room to cool down.  I can tell you that the Princess this weekend, this plan will not be happening!


This was the view from our room! We booked it back in October and were able to use my Military discount, this view was a courtyard view though I feel it counts as a pool view. Yes, that is California Adventure in the background, it was great being so close to the parks. If you didn’t know, the Grand Californian has it’s very own entrance into the park that ONLY guest staying on property can use. There is also an entrance right into the middle of Downtown Disney!


WP_20140117_026 WP_20140117_027We had two queen size beds, and it was more than enough room for the both of us. We used the tv cabinet to store all of our snacks, and the mini frig for waters. It pays to stop by a Target before hand and pick up some stuff, we saved a TON of money this way! Which was important for me, due to Jrod giving me a $50 a day challenge that included food & souvenir’s.

The bathroom was great! Clean, no mold, working perfect, and the bonus is that the shower head SPINS! I took as many showers as I could because it was so amazing! The toiletries they give you don’t go very far when you have two ladies with super long hair, but thankfully I still had supplies from my Disney Cruise and used them. It is the same products just in different packaging. The shower curtain is Thumper and Bambi!

WP_20140117_025 WP_20140117_028Over all this is a GREAT Resort and I will be bringing Jrod back here whenever we can get out to California again. I would really like to do the Tinkerbell Half Marathon in 2015. Just running the first 6 miles through the parks was worth every penny of the whole vacation.

RunDisney Tinkerbell Expo Recap

I know, it’s almost time for RunDisney’s Princess Half Marathon, but I couldn’t just not talk about one of the best running expo’s I have been to.

First off, I had been doing research about it, because I have done the Wine & Dine half so I was worried because Disneyland doesn’t have a Sports Complex, so where would they hold it!?! From my research of other bloggers, I started to get really worried because everyone was writing about how long the wait was to get in. They said to get there HOURS before the expo even opened, I didn’t want to wait in hours to get my bib and who really does.

We were in for a great surprise when they opened the expo a day early, and let me tell you the crowds were easy compared to what I had mental built up in my mind. Many people were upset because A LOT of the special Tinkerbell expo only products were sold out by the time Friday’s expo. We got there 30 mins after it opened on Friday and it was steady, but it slowly got packed.



The major downfall was figuring out the New Balance shoe situation. It turns out you had to sign up for a time to come back and get in line to buy the shoes. We went to 3 different areas to figure out where sign up was, once we signed up it was a 5 HOUR wait. Thankfully we were staying on property so we just walked over from the hotel when we close to our time. Another downfall was that anyone could get walk into the expo since it was right in the Disneyland Hotel and they weren’t checking if you were part of the race or not.

Excited to get the Pink Coast to Coast medal, and I really wish that I would have signed up for the 10K / Glass Slipper. I also got to meet Jeff Galloway! I was so excited, the line was short but people are talkers with him and he fully enjoys the conversation back :)


Overall, I was very happy and had a blast. I am really looking forward to the Princess Expo and I am glad that we don’t have to wait for the shoes because it was be very boring to wait at the Wide World of Sport Complex of 5 hours :)

When you hit up the Princess expo make sure that you stop by the Luna booth, they have the most amazing signs! #LunaCheers I got the We Don’t Sweat We Sparkle sign, that I am going to frame and put over my medal rack (when I get it) what a GREAT idea!

Travel Review: Chevrolet Spark

On my adventure in California for RunDisney’s Tinkerbell Half Marathon my friend Suz and I decided to rent a compact car from Alamo Rentals. We had 5 different cars to pick from when we got to the lot, and we were both drawn right away to the Chevy Spark .


It was perfect for the two of us, we fit all of our luggage in between the trunk and the back seat, the driving control was good, but the gas mileage was AMAZING! For driving all over LA and down the coast, we only used $14 in gas for the whole trip! Let me tell you, we one day we drove EVERYWHERE around exploring the beach areas, and we were amazed that we didn’t really put a dent in the gas tank!


One of the bonuses was that we could plug in our IPhones and listen to Pandora (Disney tunes of course to pump us up), hear our GPS, and even podcast. The screen would show your music or podcast which we both really liked. The size of the screen was GREAT! I have a touch screen GPS/ XM radio in my personal car, and this screen size was perfect! I have been finding in most cars with a touch screen it’s kind of small, even in the SUV’s which is a big NO GO for Jrod & myself.


The a/c worked great, we kept in on 1 the whole time because we would get cold if it was any higher. I liked the gauges right in front of the wheel, I have had this in my past two cars, Suz had to get use to it, and it was her only downfall for the car. If we would have had it longer I am sure she would have gotten use to it.

BONUS: The Chevy Spark comes in PURPLE! WHAT THE WHAT! Not, that I would even really get a purple car, but I like having the choice. I mean Jrod got his car in his favorite color (orange) why not me!

What has been your favorite rental car?

*We rented this car and fully paid for it, Chevy did not give me anything to review this car.

Vision Board: Inspiration for 2014

A couple of months ago I was lucky enough to be able to go to a event for making a Vision Board with a Joy Restoration Coach! Cynthia Gossman is an amazing woman who works here in the Virginia Beach/ Norfolk Virginia area. I have been wanting / planning to do a vision board even new year for the past couple of years. I have been inspired by Gina at The Fitnessista , and Jessica at How Sweet It Is, who like me finally got around to doing one this year but always plans on making one.

My goals for 2014 includes getting the Coast to Coast Half Marathon medal, running a fun 5K a month starting in March, and getting back to the gym for BodyPump classes. I also want to try out spin, and yoga classes this year.

Budget/ Job/ Making my own business


This corner focuses on my 3 major goals for my businesses: Holistic Health Coaching while incorporating doTERRA Essential Oils with it. I am also a new Beachbody Coach, because I truly believe in there amazing products. TurboFire & LesMills Combat have changed my life.

My main goal is that when we start our family, Jrod wants me to be home for my 12 weeks off work, but with income still coming in.

Starting a family! Jrod is already joking that I have baby on the brain 24/7, but I have 2 pregnant co-workers and at lunch we 99% only talk about that. I am learning so much, it’s amazing! He is looking forward to searching for a new car though :)
